1 brick of Firm Tofu (350gms)
1 large Onion
2 cloves of fresh garlic
2 tbsp Olive Oil
4 tbsp tomato puree
fresh/Dried Basil Leaves
Salt and Black pepper as per taste
Chop onion and garlic and saute in olive oil. Cut tofu in nice small cubes and put them with onions and garlic. Stir fry. Add salt and pepper. Let it simmer for a while. Add tomato puree. That's it! ready to serve hot.
One may like it as is or with steamed rice too.
Note: It can be tried adding a few more vegetables (Olives,capsicum,pickles) to make it more filling and adding fiber.
